Experiments in Bulletproof Coffee

As per my recent conversation regarding a superior breakfast on the run, I’m always on the prowl for something that promises to make getting out of bed slightly less barbarous. I like to ease into my day with a gentle, non-threatening browse on Net-A-Porter’s ‘What’s New’, followed by a brief perusal of Iza Goularts latest Instagram workouts before anything remotely cerebral can begin. My ‘somewhere over the rainbow’ moment came recently when I discovered breakfast in the form of Bulletproof Coffee. My loathing of mornings, instant oats and unwittingly resting my face in my grubby public transport hands may finally be behind me and once again, I have fat to thank. I’d also like to apologise in advance for the intolerably vain visuals.

Let’s talk it out:

Last year I ate a high fat diet for a week and lost 3kg. It was a depraved, decadent and in the end, pretty disgusting journey, but also surprisingly… upbeat! I learnt that fat burns fat and that by totally lowering your insulin levels through the elimination of sugar and anything refined, your body will melt away the lbs quicker than you can say ‘horizontal stripes’.


Despite their versatility, deliciousness and health benefits, eggs really aren’t simpatico in the AM’s early stages. Their remarkable ability to stick to the bottom of anything whilst being simultaneously unsatisfying when not served upon thickly buttered toast are ball ache and tricky to consume in transit. I want something quick, mess-free and gratifying to kick start my life – and folks, I think it’s been found. Bulletproof coffee – AKA a hot, creamy, fist-pump-in-a-mug that’s here to change the game for good. Breakfast beverages will nary be the same again.

Two weeks ago I forwent breakfast in place of Bulletproof coffee for 7 days as an adhoc experiment in caffeine-based mental stimuli/a personal journey of growth – the experience did not disappoint. Never mind the weight loss incentive, this rich, buttery elixir is like rocket fuel for the mind. I was so tuned in to my work and surroundings that each day felt like an 80’s training montage – I could practically hear the opening bars of ‘eye of a tiger’ at each stroke of my keyboard. I trained more effortlessly in the gym and the dreaded weekly spin class definitely felt less repulsive than usual.

Despite what these posts may imply, I’m not trying to lose weight, however, I did that week without much effort. I didn’t think about food until midday and the high of my mornings productivity led me to healthier, lighter choices. I normally procured a thick nut butter and banana smoothie from Roots & Bulbs for lunch followed by chicken sautéed in fennel and onions for dinner (recipe below). Snacks are cool if you need them, but I doubt you’ll even think about it.

By day 5 I also noticed my skin was looking pretty darn silky and plump…a butter induced glow perchance? Maybe it was all of this ‘killing life’ lark that played a psychological part in my good vibes, but whatever the case may be, I’m on butter fueled journey to a more efficient place – and I have a feeling that place could be heaven.


So what’s the story?

It all came about after an American health guru’s experience of drinking yak-butter tea at altitude in Tibet. He found that the caffeine combines with the fats and slowly releases its effects into the body over a long period of time. You can read the full story and science here.

What’s inside?

It’s a blend of freshly brewed low toxin coffee, MCT oil (a manufactured oil with rumored fat burning and metabolic rate boosting properties) and 2 tablespoons of grass fed butter. The grass fed element is essential because soy or corn-fed cows don’t produce the same fats. Kerrygold is the Bulletproof go-to but I use Yeo-Valley unsalted instead as it’s easier to find. ALWAYS unsalted – coffee soup is heinous.

How to make it?

I use either the Bulletproof beans or the cheaper and equally fabulous Volcano Coffee beans which I grind myself in a manual coffee grinder. I then brew it in a French Press before transferring to a Nutribullet, adding the butter and oil and blending up a storm. I have included a handy video below.

Let’s talk about taste

A rich, frothy, coffee milkshake situation that will leave your lips with an oily sheen – a potential issue for male commuters not wishing to look creepy. It goes without saying that coffee devotees will do just fine on the stuff, but those unused to the effects of caffeine should start small. Use one scoop of ground coffee with one teaspoon of MCT and one dessert spoon of butter. Work your way up to two tablespoons of butter and 1 tablespoon of MCT oil gradually.


Disclaimer: I used 1 tablespoon of butter and 2 teaspoons of MCT (I went for Bulletproof’s Brain Octane Oil here) throughout my first week. I took 3 Barrecore classes and one spinning class at Lomax. I also drank a glass or two of wine each evening and had some dark chocolate after dinner.

A Chicken Dinner For Winners

Serves 2:

  • 2x Chicken breast (preferably organic)
  • 1 Bulb fennel – cut into thick slices
  • 1 Large white onion – sliced thinly but roughly.
  • 300ml liters of chicken stock (optional, but great).
  • Large handful of basil – torn gently
  • Large handful walnuts – crushed
  • Italian dried herb mix
  • Salt and Pepper

Put the chicken in a ziploc bag and pound until it’s around 1/2 inch thick. I gingerly use an empty Grey Goose bottle Season with salt and pepper and Italian herb mix (rosemary, oregano, cumin, basil and whatnot).

Heat 1 tablespoon of coconut oil or rapeseed oil a large frying pan and fry the chicken for 2 minutes each side making sure it’s cooked through. Transfer to a plate to rest.

Throw in the onion and fennel and saute with added herbs and salt and pepper until they start to caramelise. Add in the chicken stock and simmer for 3 minutes.

Meanwhile, slice the chicken at an attractive and jaunty angle.

Tip the vegetables into a dish, top with the sliced chicken, crushed walnuts and torn up basil.
